Perfect Pancakes from scratch

Saturday morning is perfect for pancakes. A family favourite in our house, there’s nothing better than warm fluffy pancakes made from scratch

The recipe is fairly simple and uses ingredients that you probably already have at home

The trick to making good pancakes is to not overmix the batter, even if it still has some lumps in it. Overmixing the pancake can result in a dense, chewy pancake.

You can top these pancakes with anything you like. Butter works well and maple syrup also tastes great but don’t be limited to these options. We also top ours with lemon syrup, honey, golden syrup, blueberries or pieces of banana. You can also add half a cup of chocolate chips into the batter as a sweet treat.

  • 4.5 cups of self-raising flour
  • 4 cups of milk
  • 1/2 cup of sugar
  • 3 eggs
  • 3 tablespoons of margarine or butter
  • 3 teaspoons of baking powder
  • Oil to spray the pancakes

  • Mix together wet ingredients in a large mixing bowl
  • Add dry ingredients and mix with a wooden spoon until well combined. Do not overmix
  • Heat the pan. Spray with olive oil
  • Pour about 1/2 a cup of mix in the pan to cook
  • Flip when pancake starts to bubble at the top

This recipe will make you at least 24 pancakes, if not more. You may need to half that because this recipe normally gives more than enough for a family of seven. When I began to make pancakes I normally made half this for a family of five.
